My research includes strategies for the recruitment and retention of a diverse student body to effectively meet the health and nutrition needs of a diverse clientele.
I am a registered dietitian with an undergraduate degree in dietetics from Bradley University with training through the dietetic internship program at Saint Louis University. I completed my graduate degrees in educational studies (Ph.D.) and dietetics with a special emphasis in nutrition in physical performance (M.S.) from Saint Louis University.
I served as the director of the Didactic Program in Dietetics and as an assistant professor at Saint Louis University and have experience teaching online courses for several institutions of higher education. Nutrition education and multiple intelligence theory were focal areas of my doctoral research. I served as co-principal investigator on a USDA grant involving the implementation of school-gardening and nutrition education within inner-city schools. My career also includes serving as the Team Nutrition Project editor for the Colorado Department of Education, an outpatient dietitian at a hospital, and a community dietitian in a health department.
